The Bread Bible ReviewRe the rye bread, on page 326, step 2, delete the words 'rye flour.' (the rye flour is used only in the sponge on page 325.) Also, on the chart for the flour mixture, the 2 1/4 cups of bread flour weigh 12.3 ounces.
Hope you are enjoying the recipes. If you haven't used the instant yeast before, you're going to love the ease and reliability of adding it directly to the flour!

Cooking With Artisan Bread ReviewI'll be honest--I have not yet cooked recipes from this book, but am buying it now. The reason I am writing this review is that the other reviewer is mistaken. She says that the book is not about "Cooking with Artisan Bread." The book is about precisely what it says: using artisan bread in your cooking. What the reviewer Jane means is that the book is not about baking bread, and the book does not pretend it is about that. (Think: cooking is not baking.) She should have read the editorial descriptions and the recipe list to realize that. The recipes are for dishes--panini, bread pudding--in which you USE artisan bread. I am buying the book so that I can use loaves more fully. Sometimes after the first day of plain bread with a meal, the loaf sits there unused. My bread-loving family will probably devour the dishes from this book!Cooking With Artisan Bread Overview

The Bread Lover's Bread Machine Cookbook: A Master Baker's 300 Favorite Recipes for Perfect-Every-Time Bread-From Every Kind of Machine ReviewI bought this book last Christmas after receiving a machine for a gift. I made a few recipes from the owner's manual and experienced quite a few flops. I refused to be defeated and knew there must be a book out there that would help me make good bread (with the machine that I had begged for). THIS is the book!
I read all the reviews that precede 2002 and got the book right away. I love the way Hensperger explains ingredients, the science of bread and how the machine works. We use our machine at least 3-4 times a week. Some of my favorites from the book include the Hamburger and Hot Dog Buns (I will never buy storebought again!), the Garlic Foccacia, the Orange Bread with White Chocolate, Apricots and Walnuts, and for sandwiches my family loves the Instant Potato Bread and the Maple Buttermilk Bread, both of which turn out light and fluffly.
I remember reading a review that discussed the different ways to measure flour. For some reason, if I do it Hensperger's way, I always have to add more flour. So, I just scoop it without aerating the flour first.
Another review mentioned that you "have to" use SAF yeast. I haven't found this to be true. I have used the SAF, but have also used fast-acting and bread machine yeast. Both have turned out fine. All of the ingredients have been at a local supermarket (I live in a small town - 23,000, on the Central Coast of CA) except the specialty flours like barley, spelt, semolina, etc. Those I have found at a health-food store.
I can't say enough good things about this book! My copy is tattered and stained and I am enjoying working my way through all the recipes. Artisan Baking Across America: The Breads, the Bakers, the Best Recipes ReviewNo one book stands out as the definitive manual for artisan bread baking, but this is definitely one to go alongside the other classics on your bookshelf: "Crust and Crumb," "The Village Baker," "Breads of LaBrea," "Bread Alone," etc. For me, Steve Sullivan's recipe for his rustic baguette was worth the price of the book. Anyone who has been to Acme and tasted one of those baguettes will attest, it doesn't get much better. I took my family there for breakfast while on vacation, and for as much bread as they have tasted in my kitchen, they knew they were experiencing something special. And, with the exception of his chapter in the Chez Panise cookbook, Steve doesn't appear to make his recipes known. Ms Glezer's instructions are a little confusing, but I figured it out and had great results the first time out. The Bread Machine Bakery Book ReviewMy favorite bread machine recipe of all time is the Seven Grains Bread in this book (p 36). It is dense, robust and chewy. No need for butter, very satisfying. This is also a great book to get if you want to try an assortment of ethnic and unusual recipes. They have Hungarian potato bread, Swedish saffron bread, quick breads such as teff nut bread, lots more. Easy instructions.The Bread Machine Bakery Book Overview

The Complete Bread Machine Bakery Book ReviewOf all our bread machine books, Langer's has provided more favorites than any other. Who'd have thought that semolina flour would make such great bread --no one could resist the sesame-semolina bread. A review here has been delayed for too long because each bread I've tried has been an instant favorite leaving little motivation for trying more recipes.
So far I've never had a failure with a recipe, although I've needed to make an adjustment now and then, such as adding a bit of liquid to offset the dryness of flours in our dry air, or replacing a tablespoon or two of the flour with pure gluten flour to compensate for the weak flours found in Western markets. Part of learning to use a bread machine is learning to make such adjustments and to evaluate the dough while it's being kneaded by the machine (there's an excellent discussion in an early chapter) --it's a pity so many books pretend that good bread will always follow a by-the-numbers adherence to the instructions. My one criticism of this book for a beginner is that suggestions for evaluating a dough and making adjustments are too often separated from recipes.
I don't know that I'd recommend _any_ book to be used alone by a breadmaking or bread machine beginner, including the manuals that come with the machines, but Langer's book will certainly be one of the most useful adjuncts to the manuals. It's become my favorite of the several books I've received since being given a bread machine, and I'm giving a copy of it with every bread machine I buy for a gift-- in the hope that Langer's immense appreciation of bread and freewheeling love of experimentation will sustain a beginner's breadmaking beyond the manuals and beyond the first disappointments (inevitable to any bread machine beginner regardless of the recipes he uses). The array of European-style breads and especially rye breads is especially tempting. The book goes far beyond table breads with many sweet yeast and quick breads and other fascinating concoctions.
As always, Langer instructions are clear, the asides (especially the descriptions of bread experiments which didn't make the book) entertaining, and the illustrations by Susan McNeill pleasing and encouraging. There is an extra: somehow Langer has persuaded his publisher to achieve the perfect cookbook format: spiral bound pages within a hard board cover. It's the best of two worlds: the widely wire-bound pages open perfectly flat and the cover protects the pages --and there is a spine for the title so you don't lose the book on the shelves.The Complete Bread Machine Bakery Book Overview
