The Professional Pastry Chef (3rd Edition) ReviewCovers basic Doughs (bread, cake, pastry) Breakfast stuff, cookies, tarts cakes, individual cakes (including charlottes), custard soufflee and mousse, ice Cream, decorating with chcolate and sugar, and others. About 1150 pages.
This is an awesome book. It costs twice as much as any other book, but it's worth it. This book gives you the hows,whys, and principles of everything which is nice. For example it has a chart showing how creme caramel, creme brule, pastry cream, sabayon, pots de creme are all just modified creme anglais. However it does assume that you know a little bit, so for a first book "the cake bible" "the pie/pastry bible" or "baking with julia" might be more suitable. You know that all of the recipes are tested. There are a few things to look out for however. The first is that you will have to scale down all of the recipes - they are written for bulk. The second is that the photos and recipes aren't put together or indexed well - you have to hunt for the recipe for a particular photo. Not only does it have great recipes, but it also provides pictures of right and wrong results and hints as to how to fix it. No Need to Knead: Handmade Italian Breads in 90 Minutes ReviewDuring my two month stay last summer in the LA area, I grew positively addicted to the fragrant, chewy Italian breads produced by a wonderful bakery named Buona Forchetta. Carried by only the finest restaurants and grocery stores, these fresh, crusty breads surpassed anything I had tasted in Italy. As my wife poutingly puts it, I fell in love--with a bakery!
Upon my return to Florida, the dismal selection of supermarket Italian breads left me pining for a loaf of BF's kalamata olive filoncino, or a rosemary encrusted foccacia, or a pane rustico or...and then I would arouse from my wistful daydream to face another day-- without Buona Forchetta!
My depression ended when I discovered Suzanne Dunaway's great new book, No Need to Knead. Suzanne, founder and owner (along with husband, Don) of Buona Forchetta, has written (and illustrated!) a wonderfully lively bread manual in which she shares her wealth of hard learned breadmaking secrets.
I ordered the book from Amazon immediately and quickly found myself mixing up the first foccacia dough of my life. Me, a baker! [See wife skeptically smiling].
But would it work, and could it be this easy? No kneading! Ready to eat in 90 minutes! And most important of all--would the crust and crumb taste like the great Buona Forchetta breads that I had grown to love? The answers are, Yes, Yes and Yes! Plus, it's one heck of a lot of fun. Thank you, Suzanne!
At the time of this writing I have successfully made the foccacia, both the rosemary and kalamata olive filoncinos, crusty dinner rolls, and the whimsical fougasse.
Every one has been a gustatory home run--and my neighbors now love to see me come loafing around on my bread route. If I can do it, you can too! So far I have just scratched the surface of this enticing book. Still to come are traditional breads, pizzas, sweet loaves, bread sticks, specialty breads, and...this is a great idea...bread as leftovers! As in yummy bruschette, soups, mouth-watering croutons, and desserts.
Reflecting on her own upbringing in happy kitchens, Ms. Dunaway has thoughtfully included a chapter on making bread WITH children. Reminds me of the cinnamon sugar pie crust tailings I would bake with my mom.
Obviously I am quite taken with this book. Suzanne Dunaway has distilled a lifetime of cooking and living experience, much of it acquired on the ground in Italy and France, into a first rate bread book. The best part is that her words translate into delectable products that will amaze beginning bakers and please discriminating bread connoisseurs.
Now, all of us can easily replicate the wonderful aromas and chewy bread textures of an Italian bakery right in our own kitchens.No Need to Knead: Handmade Italian Breads in 90 Minutes Overview

Christmas Cookies from the Whimsical Bakehouse ReviewI purchased this book with high hopes and great expectations. I have the Whimsical Bakehouse and was thrilled by it. This book was not what I assumed it would be. It is a collection of Christmas cookies of varying types. There are bar cookies, gingerbread, and cutouts, to name a few. I was hoping to find a book with wonderful decorating ideas for Christmas cutout cookies since that is what is displayed on the cover. In fact, they only give a template for that cookie but no real instruction as to how to achieve the look. Now, I am quite proficient at decorating, but sometimes need some great ideas to kick start my creativity. In fact, there were quite a few truly adorable cookies in the front section of the book, but no further information on them.
If you are one who prefers to figure out on your own how to achieve a certain look or don't mind the trial and error method then maybe you will like this. If you are looking for a collection of cookies to add to your library than this is a good option. However, if, like me, you are wanting to "WOW" people with spectacular, highly detailed Christmas cookies, this is probably not what you are looking for.Christmas Cookies from the Whimsical Bakehouse Overview

The Artful Cupcake: Baking & Decorating Delicious Indulgences ReviewI was delighted to find this book since, a few weeks ago, I looked through all my many books on baking for a simple cupcake recipe and I could find but one true cupcake recipe. And this was with a cake recipe on which I was not keen. I was doubly surprised to find not a single decent cupcake recipe at the Food Network web side at the time.
Upon reading this book, the first thing which struck me was that it was as much or more a craft book than it was a book on baking. The first clue is that the publisher specializes in craft books. It is not one of those major cookbook houses like Knopf, Clarkson Potter, Wiley, or even Ten Speed Press. The next clue is that the author's previous books are all on craft topics such as decorating with lights, gel candles, silk flowers, and scarecrows. The story becomes clearer when it is evident that the name on the front cover, Ms. Marcianne Miller, is probably much more a collector and editor of ideas than an author, let alone a baker. Among the fourteen (14) `Contributing Designers' names at the end of the book, her name appears last. A minority of the thirteen other individuals named and profiled here are professional bakers. Most are amateurs whose main vocation is in the arts, crafts, or non-baking part of the food service industry.
All this is to make the impression on you, dear reader, that this book is less about baking cupcakes than it is about baking AND DECORATING cupcakes. This is not to say this is a poor book. Just the opposite is true. This is a very good little book on baking AND DECORATING cupcakes.
The book begins, as expected, with basic baking. On this matter, the book is brief, but flawless in giving you the essentials of cupcake baking. As part of this introduction, it describes silicone muffin pans and mini-bundt pans, neither of which have I taken much notice until I saw them here. The section on basics includes an extremely useful instruction on how to convert all but sponge cake recipes into a cupcake recipe, based on the size of cake pan for which the recipe is scaled. The introduction continues with basic instructions on frosting and icing and how to use piping bags and other decorating equipment. The most important information in the intro is the three basic cupcake recipes for Classic White, Easy Yellow, and Chocolate Buttermilk cupcakes. This is followed by three basic recipes for classic buttercream, ivory buttercream, and cream cheese frostings.
Each of the remaining thirty-six main sections are a pairing of a cake recipe with a topping or decorating technique. Most of the cake recipes are familiar, but some such as the key lime tarts and the chocolate truffle cupcakes are quite a pleasant surprise. Not every section introduces a new cake, but every section does introduce a new decorating style, technique, or topping. Some of the toppings are borrowed from well-known standards such as a Maple Walnut Streusel and white chocolate roses. Many other toppings are elaborate. Some are elaborate in the extreme such as the chocolate domes which are worthy of a major pastry talent such as Jaques Torres or Pierre Herme.
The cupcake styling chapters are interspersed with sidebar sections on special techniques and ingredients such as baking with nuts, baking with fruit, fruit glazes, baking with spices, small decorative touches, and decorative sugars. I found no deep insights, or even any new facts in these sidebars, but they were often assuring me that my experience was not taking me off in the wrong direction.
If, like me, your primary interest is in baking and not in crafting, you will probably get your money's worth from the cake, frosting, and icing recipes. If you are primarily a craft person, you will get the straight scoop on the baking and lots of ideas for show-off decorations.
As a sturdy hard cover book for less than twenty dollars list, this book is a worthy addition to your library, as long as you have the need to make cupcakes, especially for kids, at least three or four times a year. The only thing the authors overlooked was to provide at least one cupcake suggestion for each major holiday where a cupcake might be an appropriate dessert such as New Years Eve, Valentine's Day, Easter, Mother's Day, Halloween, Christmas, and a child's birthday. I guess you will have to rely on Martha Stewart for this.
Highly recommended if you have the time and inclination to do fancy cupcakes.The Artful Cupcake: Baking & Decorating Delicious Indulgences Overview

The Brooklyn Cookbook (Knopf Cooks American) ReviewIn addition to the fact that the recipes work and are delicious, the best thing about this book was that it traced the ethnic roots of the many diverse cultures that made Brooklyn a true melting pot. I grew up in Fort Greene/Clinton Hill and that book brought me back home for a little while longer. Reading the stories that accompanied each of the recipes, I was again transported to the experiences and landmarks of my childhood and that of my parents - football weddings, the Botanical Garden, Junior's, Jahn's Ice Cream Parlor,Ebinger's Bakery, Bamonte's Restaurant, the Garden Room at Abraham and Straus, weekend picnics at Crestwood Lake. I could almost hear Aunt Jennie and my mother arguing over whose cooking most closely resembled their mother's (it was my mother,although Aunt Jennie wielded a mean fusilli rod!!) More importantly, I found myself immersed again in the sense of family and community that are my home borough - a sense that transcends every ethnic background. It was fun, poignant and tasty! I have given this book to friends as gifts over the past few years and everyone loved it. Only one criticism. In the section on Cammereri's Bakery, with the references to the movie Moonstruck, Gilberto Godoy (the real life bakery owner), did not play Ronnie Cammereri. Nicolas Cage played Ronnie, one of the starring roles. Given the popularity of the movie,that was probably the one item that should have been absolutely correct.The Brooklyn Cookbook (Knopf Cooks American) Overview

I remember as a young girl that I adopted the prairie vernacular of Laura Ingalls; my family tolerated it, my friends teased me and my teachers were appalled. The protagonist in this tween book speaks like her favorite characters in Pride and Prejudice and Anne of Green Gables, although she lapses into normal teen speak when she is with her friends sometimes. Inspired by these books, Polly sets out to be the town matchmaker with very mixed results including one arrest, one tumble off of a pier (complete with jellyfish stings) and an angry suitor. Chocolate Epiphany: Exceptional Cookies, Cakes, and Confections for Everyone ReviewThis book is on a level that few chocolate, or to that matter dessert, pastry etc books have reached. It shouts quality from every point of view: From the excellent cover, to the gloss pages ,on to the beautiful photographs and finally to the most important aspect, the recipes, this is a book that mirrors its author's love for the subject.
Francois Payard is a Frenchman living in the USA, and is the owner of a patisserie and bistro in the New World. Unlike many Europeans that have negatively changed their culinary and patisserie heritage to suit the tastes of their new homelands, Mr Payard very succesfully presents French chocolate patisserie, slightly adopted for the American tastebuds but without being commercialised or cheapened by using margarines, shortenings, or too much sugar.
The book uses both Metric and Volume (cups and spoons) measurements so that ingredients can be easily measured by all. It does not however use Celsius temperatures, only Fahrenheit, but this can be easily remedied with a comparative table.
This book is geared towards both the Professional and the amateur. Most of the recipes can be made by home cooks, but read the instructions carefully. The author gives some useful tips to read before one attempts the recipes.
Then the feast starts. There are more than one hundred recipes included, starting with breads and brunch dishes. In this chapter we find among others: Chocolate cherry bread with cocoa nibs, Chocolate brioche with chocolate chips, Chocolate blinis.
Then we move on to Cookies and Petit Fours: Here I particularly like the Florentines, Triple chocolate Financiers, Chocolate coconut rochers, Cracaos, Flourless chocolate cookies. There is also a recipe for chocolate churros with dipping sauces.
The next chapter is Candies and Chocolate. It is one of the best chapters. All the products here are mouthwatering. They include: Chocolate Marshmallows, Chocolate Nougat, After "8" chocolates, Muscadines, Rum Truffles.
Then come Mousses, Meringues and Ice Cream, with Chocolate Creme Brulees, Coffee and Chocolate Panna Cottas, Floating Islands in Spiced Chocolate Sauce, Milk Chocolate Parfaits with Chocolate Popcorn, Dark and white chocolate Napoleons, Trio of Chocolate Mousse Cake, Bittersweet Chocolate Sorbet.
The Tarts chapter is represented (among many others) by Chocolate Meringue Tart, Chocolate Pecan Tart, Chocolate Pear Almond Tart, Peanut Caramel Tart.
The Cakes chapter should really be called Gateaux or Entremets Section as most of the products are elaborate or layered creations, along with some decadent cakes: Gateau de crepes with Green Tea Cream, Chocolate Rum Savarin, Flourless chocolate cake, Chocolate Saint Honore, Pine Nut Turron Cake, Dark Chocolate Cheesecake with Orange Marmalade, "American" Opera Gateau using Peanut Buttercream and Peanutbutter Ganache, are only some of many creations.
Then come Plated Desserts: White chocolate cheesecakes with blueberries, Chocolate crepes with Vanilla Ice cream and Candied Orange, Chocolate sticky toffee puddings, to name a few.
The final chapter includes the basics, such as buttercream, browned butter, almond cream, simple syrup, praline paste, chocolate mousse etc.

Sylvia Weinstock's Sensational Cakes ReviewI pre-ordered this book and couldn't wait for it to come. The book is beautiful as it can possibly be. The beautiful cakes in there are awe-inspiring and gives those of us just starting in the business something to strive for. Ms. Weinstock does give good suggestions about how to handle a cake tasting and planning, having the forum of the reception in mind in design of the cake, and shares her recipes with us.
However, if you're looking for instructions on how to do gumpaste flowers, how to place flowers on forms in between layers, or how to assemble a cake, look elsewhere. But if you have a good repetoire of cake decorating books or sugar decorating books, that info will probably be in there. If you're looking for a book of cakes that can inspire you and recipes that are yummy (made chocolate fudge cake, lady baltimore cake, the bc and bc fillings for a practice cake)-you'll love it!Sylvia Weinstock's Sensational Cakes Overview

Professional Baking, Fourth Edition ReviewThis is a very thorough and well-written book, which is sponsored by one of the most respected cooking schools in the world: Le Cordon Bleu. Please note that this book is not for the occasional home baker/cook, but rather for the professional or serious amateur.
First off, one of the most important aspects of this book that may surprise people is that most of the recipes measure ingredients by weight (e.g., grams, ounces, pounds, etc.), NOT volume (e.g., cup, teaspoon, tablespoon, etc.). But don't let this turn you off--at least not yet. There is a very good reason for this. In order to make a consistently good product, you need to know that you're putting in the correct amount of an ingredient every time; and measuring by volume is NOT as accurate as measuring by weight. For example, I'm sure that most of us have made chocolate chip cookies at least once in our lifetime and have noticed that the recipe calls for lightly packed brown sugar. But how much do you pack it? I might pack some brown sugar into a measuring cup and think that it is "lightly packed", but another person's definition of "lightly packed" may be different and he/she might pack more brown sugar into the measuring cup. But if we both measured 8 oz. of brown sugar, no matter how we packed it, it would still be 8 oz.--no more, no less. Therefore, potential buyers of this book need to realize that purchasing a scale is almost a necessity in order to get professional results.
If baking is an occasional pastime or if measuring ingredients by weight is just not your cup of tea, then there are PLENTY of great cookbooks out there for the occasional baker that measure ingredients by volume. However, if you have the personality that wants and loves to try to make that absolutely perfect cake or pastry, then this book will help you do that.
Previous reviewers have complained that this book is "smoke and mirrors" and not for the home cook, or that the recipes were faulty and tasteless. To be fair, you have to take the book for what it is. The title is called "PROFESSIONAL Baking", not amateur, not home. It is very clear from the title that this book is not for everyone, especially with the weight/volume issue that I mentioned. As for the "faulty"/"tasteless" claim, my instructor has studied and worked in Hong Kong, France, and Austria. And in each class, she demonstrates each recipe and the results have always been spot on (which is more than I can say for myself and my classmates). Personally, I think that it is too easy to blame someone or something else; rather, I always look to myself first and then elsewhere. But enough of my two-bit philosophy.
One last thing that often confuses people and is probably the cause of many of their mishaps are the instructions regarding what baking pans and times to use. For instance, let's say that a typical recipe will make 5 lb. of dough, batter, whatever. The recipe will give you instructions and baking times for multiple baking pans (because professional bakers will use many different shapes and sizes depending on the job, right?). Therefore, the instructions will say that a 8-inch cake round needs 1 lb. of batter, that a 9x13x2 rectangular pan needs 2 lb. of batter, etc. But didn't the recipe yield 5 lb. of batter??? What the !@#$%??? This is confusing. How much do we make? What pan are we supposed to use? Let me explain: Since professional bakers use many different pans for the same recipe (e.g., a baker may make a chocolate cake in a 9-inch round or a full sheet, right?), they will adjust the recipe to get the exact amount of batter that they need for that particular job. So, if the recipe makes 5 lb. of batter and you only need 1 lb., then just divide all the ingredients by 5 and you'll get a yield of 1 lb. Or, just make the regular-size recipe and just weigh out 1 lb. of batter and make five of them. After you understand this, you'll begin to realize that it all is actually pretty simple and straightforward. I think that most people just don't like to weigh things or do a little math. They're just used to measuring by volume and having recipes designed to produce a single product, rather than multiple. And like I said before, that is perfectly fine and there are tons of great books out there that will suit that purpose.Professional Baking, Fourth Edition Overview

Provides very interesting historical background, amusing anecdotes and a set of plans which are aimed a bit more squarely at the amateur builder than Alan's plans. I'm building an oven now using plans interpolated between the two. If you're going to tackle a project like this, get a good book on masonry techniques too, or better yet, a video. Classic Stars Desserts: Favorite Recipes by Emily Luchetti Review`Classic Stars Desserts' is `Favorite Recipes by Emily Luchetti'. An important thing to know about the book is that it is a digest of two earlier books by Madame Luchetti, `Star Desserts' and `Four-Star Desserts', both presenting recipes from Jeremiah Tower's San Francisco restaurant `Stars' and the companion `Stars Café'. So, if you own one or both of these earlier books, you may have second thoughts about getting this re-presentation.
The high-end restaurant dessert menu book field is a just a bit crowded and includes some outstanding offerings. The two best I've seen in the last few years are `The Secrets of Baking' by Sherry Yard of Spago, Los Angles and `This Sweet Life' by Kate Zuckerman of New York City's Chanterelle. Both books distinguish themselves by digging deep into the mysteries of baking technique, making themselves very valuable to the ambitious but unschooled amateur bakers.
What makes this field even narrower is the fact that while the home cook may get worthy ideas for everyday meals from a restaurant book with recipes from The French Laundry, Chez Panisse, Babbo, Commander's Palace or Nobu, it is highly unlikely that elaborate dessert recipes will be used for anything except entertaining, or to inspire the really dedicated baking hobbyist. To address this concern, the book's recipes are labeled `deceptively simple'. This phrase hides the possibility that what is being hidden is a complexity mastered only by professional pastry chefs. Let's explore this, shall we.
For starters, we find desserts and wine pairings in this book which is not commonly found in other dessert books, certainly not in those from Yard and Zuckerman or the great standard texts by Maida Heatter, Nick Malgieri, Flo Brakker, and Rose Levy Beranbaum. Score one for Luchetti as an entertainment source. Another consideration is that this book is about the entire range of desserts, not just baked goods. So, it includes much on non-baked dishes, such as puddings, ice creams, and compotes. If you happen to own Ms. Luchetti's book on Ice Cream, which I have not yet seen, it may diminish the value of this book for you by just a smidge.
Ms. Emily begins with `Things That Make a Difference', a primer on baking equipment and techniques. The best news in this chapter is the fact that none of her recipes will require one to temper chocolate, a black art if I've ever seen one.
The `Sweets and Stickies' chapter is written by the Farallon wine director, Peter Palmer and lists dessert recipes by the wine with which they are best paired. This has the nice feature that you can choose (or find yourself left with) a wine, and wish to match a dessert to it.
`Puddings, Custards, Mousses & Trifles' covers an excellent variety of entertaining dessert, which can easily be made a day ahead and is virtually certain NOT to be mistaken for something you bought at your local Patisserie.
The `Chocolate Desserts' chapter may seem like the home of famous baked goods; however, it is actually where you will find more gooey goodies, such as bread puddings, chocolate pudding, zabaglione trifles, chocolate semifreddo, ice cream sandwiches, white chocolate parfaits, espresso granita, and gateau royale. This and the previous chapter hide several ice cream recipes.
The `Hot Desserts' is another chapter which guarantees a `homemade' cachet. It seems to have most of the classic recipe names, such as Crepes Suzette, Blueberry Blintzes, Apple Pandowdy, Pear Charlotte, and Chocolate Souffle. Again, there is not a lot of `baking' going on here, but lots of familiar tastes in unfamiliar guises, such as the rhubarb ice cream. Note that you will need an ice cream maker to make several of the desserts in this book.
`Fruit Desserts', as one may expect, is also low on baking requirements, but there are a lot more frozen goodies such as a creamsicle bombe, vanilla ice cream, tangerine ice, and frozen kir royale. And, the ultimate wine and dessert combination, poached fruits.
`Pies, Tarts, & Pastries' gives one the feeling that now we are getting down to business and actually baking. There are several standards, such as pumpkin, key lime, blueberry, and banana cream pies plus some fancy French tarts.
`Cakes' is another baker's venue, where most recipes also have familiar names with a bit of a twist, such as the goat cheesecake with mixed berries and a plum-cardamom upside-down cake.
`Cookies and Candies' has a surprisingly large number of recipes, so that if your bookshelf is light on cookie recipes and short on space, this makes it a strong argument to get this book. There is a nice mix of standards such as chocolate chip cookies and oddies, such as stareos (gourmet `Oreos', mascarpone filling between chocolate shortbread).
The `Breakfast' chapter is a bit thin for a major restaurant which stays open for breakfast, but all the recipes, of course, are sound. I was just a bit surprised that the cinnamon roll recipe was not quite as elaborate as my favorite and most successful one in `Baking With Julia'. Score one for simplicity!
The `Building Blocks' chapter covers 25 commonly needed dessert staples, especially crème fraiche, pastry cream, caramel sauce, tart and pie dough, brioche, sponge cake, and crepes. Almost all recipes include a `Planning Ahead' paragraph that is especially useful for entertaining applications. The recipes are all sound; however, they are not as detailed as you may find in either Yard or Zuckerman's books, and especially not as detailed as in standard baking texts. Some methods are just a bit different than the norm, as when the author uses a stand mixer as her pie dough mixer of choice (almost everyone else suggests doing it by hand or with a blender.
This may not be your best first baking book, but if you already have sound baking skills, this has great entertainers, both familiar, easy, and exotic.Classic Stars Desserts: Favorite Recipes by Emily Luchetti Overview

The Complete Book of Baking ReviewLike the other reviewers, I bought this book when it came out in 1993. Back then, I needed some different recipes for my Christmas cookie party. The Complete Book of Baking offers everything from the classic recipes such as Peanut Blossoms to the newer Cranberry and Orange Pinwheels. I've baked many different kinds of cookies as well as breads, using this cookbook, and all of them are easy to follow. It's a shame that this book is now out of stock because my husband has used it so much that the pages are starting to come loose. His favorite recipe is the praline pecan cheesecake, which he makes every year. Our families have bragged about his cheesecakes to every one of their friends. Yet not one of them has asked where he got the recipe.The Complete Book of Baking Overview

Sinfully Vegan: Over 140 Decadent Desserts to Satisfy Every Vegan's Sweet Tooth ReviewTo begin: I love this book. Love, love, love. I do have one complaint, though. With 140 recipes, it's going to take me forever to try them all! Especially since I just want to keep making my favorites over and over again.
Anyway, I could gush for hours about how great the recipes themselves are. [The Richer Than Fort Knox Cake was a huge hit at my husband's workplace. Everyone was shocked that 1) it wasn't from a bakery, and 2) it was 100% vegan. And I always love showing people that you don't deprive yourself of good things by making vegan choices.] But before I get carried away, I'd like to point how how much I love the organization of the book. Each recipe is divided into simple steps, and recipes are subdivided into sections--like the cake, the frosting, the garnish, etc. Also, Ms. Dieterly includes serving info, prep and baking time, and nutritional information, and also notes whether the recipe freezes well. And for those with wheat allergies, all of the wheat-free recipes are specifically marked as such.
She has recipes for the following dessert categories: cookies and brownies; cakes and quick breads; Boston cream pies; pies and tarts; cheesecakes; puddings; donuts and candy; beverages and smoothies; and frostings, toppings, and crusts. Sadly, there are no vegan ice cream recipes. But I'll be so busy eating brownies and cheesecakes and donuts, I won't have time for ice cream anyway!
The ingredients she uses should be familiar to most vegan cooks, and I don't have any trouble finding them. However, if you're new to vegan baking or live in an area where it's difficult to find, for example, silken tofu, then the author provides an introduction to the vegan ingredients you'll need, as well as a list of mail-order companies from which you can purchase the necessary ingredients. And if you're still searching, a quick Google search can reveal numerous places on-line to purchase vegan foodstuffs.
Finally, I'd just like to comment on the writing style. I really enjoy reading the author's recipe descriptions and other comments. She's clear and informative, but also sounds like a friend who's hanging out in your kitchen while you're baking.

The Taste of Home Baking Book ReviewI have a ton of cookbooks, literally, and I liked this book. Taste of Home's books are always fun and nice to have, because they are written by people just like you me, who like to cook and bake. There aren't generally a lot of fancy schmancy masterpieces in these books, just good edible food from tried and true recipes. It reflects what people are eating, and there are some nice recipes. I found a couple that I'll be making over the Xmas holidays. I tend to buy the books from Amazon because the price is always about a third lower than buying directly from Reiman. Reiman is sleazy with their fake promos and misleading offers, so don't think you'll get anything worthwhile from those. I've subscribed to the magazines for some time, so I am on to them. That said, the books are a nice additon to the home library of people who like spending time in the kitchen. If you're an experienced baker, you can use it as an idea book. If you're new to baking, you can learn a lot from the recipes. The directions are generally straight forward and easy to follow.The Taste of Home Baking Book Overview

Bon Appetit (French Twist, Book 2) ReviewBon Appetit by Sandra Byrd is a book about a young girl, Lexi, who moves to France to work in a bakery and go to school to become a pastry chef. Lexi's transition from America to France is fraught with difficulty. First of all, so many of the people with whom she deals hate Americans, which is understandable as a cultural generalization, but not of Lexi who is wonderfully warm, respectful of French culture, and best intentioned. Secondly, school is hard and complicated by different personalities and someone sabotaging the students' recipes. Finally, Lexi has to make difficult choices concerning her romantic life and her professional career. You'll find yourself pulling for Lexi as she encounters each obstacle, and your heart will soar each time she learns to trust in God for guidance and companionship.
Lexi's story is great. This book is the second in a series, the first book being Let Them Eat Cake. However, you do not need to have read the first book to completely enjoy and understand Bon Appetit (I still haven't read the first book, but I will).
The best part about this book for me were the discussions on food. Seriously. I love to cook and reading about the cooking school and all the fancy desserts being made was just facsinating to me. Best of all, there are several recipes featured in the book. Most are desserts, but there was a recipe for French Onion Soup which, once altered to suit a vegan diet, was DELICIOUS!!! I love French Onion Soup, but haven't had it in years because of the beef broth used in restaurants (and the fact that my one attempt to make it at home years ago was a horrible flop). I tried the recipe in this book (page 143) and LOVED IT. In fact, I started out by making half a batch in case it was bad, and went back and made a double batch the next day.
This book is truly a yummy book, for reading entertainment and your pleasure in cooking! I'm looking forward to the next French Twist book!Bon Appetit (French Twist, Book 2) Overview

The Village Baker: Classic Regional Breads from Europe and America ReviewJoe Ortiz's book changed my life. I had been baking straight yeasted breads for several years. These were good, decent breads, but plain. I longed for a more complex loaf - one with the irregular holes in the crumb, one that had a chewier texture, and longer shelf life. Joe Ortiz's book showed me how to achieve all those goals. His book also explains why certain methods produce different results. Another of the helpful features of his book is that he distinguishes his recipes by fermentation method(i.e. sourdough, sponge, old dough, or straight yeast), which makes it a book a beginning baker can use, and grow with as the baker's skill develops (the straight yeasted doughs are the easist). I think this is a must-have book for any serious, or semi-serious homebaker. While this book can be difficult to understand, the quality of the instructor has a great deal to do with the user's comprehension of the subject matter. I find this an excellent book and continue to use it today (because I know how to make it work for me).
