Cakes to Dream On: A Master Class in Decorating Review`Cakes to Dream On', subtitled `A Master Class in Decorating' by major American pastry artist and teacher, Colette Peters has the ambition to be an advanced class in multi-tiered cake decorating. This ambition is not to be taken lightly, as there is very little in this book for the amateur home / bake sale cook. This is not to say that the book is not chocked full of great ideas, if you already know a lot about how to work with royal icing, fondant, marzipan, and multi-layered cakes. I have made a two and three layered birthday cake in my day, but these creations are entirely out of my league.
The book consists of four general parts. The first part is the first chapter on `How to Make a Decorated Cake', which covers materials to use as the base of a multi-layered cake, who to reinforce the layers, and how to make crooked cakes on purpose. For those few of you out there who actually make tiered cakes, this is one of the more useful topics, although I confess much of it is pretty common sensical.
The second part of the book is the next eight (8) chapters, which are almost all alike in being simply collections of decorated cakes done by the author and her company with instructions on how to make these cakes and their decorations. The instructions assume the person making the cake has access to a lot of specialized tools, materials, and specialized training. One decorated cake chosen at random requires:
Fondant
Tracing Wheel
Gumpaste Ribbon Roses and Leaves
Royal Icing dots on wires (oh my)
Luster dust
Royal Icing
Gumpaste Pearls
Three foamboard circles
Foamboard base
Gumpaste curly hearts
Lemon Extract
Piping bag and #2 tip
Oval shaped dragees
Paintbrush
Descriptions of how to construct several of the cakes include printed templates for preparing some of the designs on the cake. I find these particularly unhelpful, as they require one to have an enlarging photocopier handy to enlarge the diagrams on heavy paper from which they can be cut and used as a template. Now I am certain that a commercial pastry shop would have such a copier, so this reinforces my impression that this book is really meant primarily as an idea source for other pastry professionals.
The third section is recipes for cakes and icings. One is likely to find as good or better recipes for these things in books by Maida Heatter, Nick Malgieri, or Rose Levy Beranbaum. If your primary interest is in baking birthday cakes or bakesale cakes, I strongly suggest you get Beranbaum's `The Cake Bible' (which happened to win best cookbook of the year from the IACP a few years back) instead of investing in this book which works much better as coffee table decoration than as a manual for cake baking. Beranbaum includes such things as candy and nut embellishments, food processor fondant, rolled fondant, chocolate fondant, pastillage, rose modeling paste, crystal flowers, as well as her extensive recipes for cake, fillings, and icings.
The fourth section has a title suggesting that now the `master class' in techniques really begins. This chapter includes short sections on which one could easily write a whole book, such as:

Quick Reference Guide to Tools and Ingredients
Without a doubt, Ms. Peters' cakes are knockouts and her photographs and techniques are chocked full of ideas for professionals. Jacques Torres and Ewald Notter are not going to endorse just anyone's book. It is just that her book is simply not very well organized to teach people with modest skills and objectives.
So, if your objective is to daydream or to open a professional decorated cake store, this book is for you. If you simply want to improve your cake baking and decorating skills a bit, get Beranbaum's book and an inexpensive pamphlet on cake decorating from Wilton at your nearest hobby mart.Cakes to Dream On: A Master Class in Decorating Overview

Presented by Southern Living Big Book of Cupcakes: 150 Brilliantly Delicious Dreamcakes ReviewI am a pastry chef and I own 300 cookbooks. You would think that little would impress me. You would be wrong. Jan Moon's Big Book of Cupcakes is so much more than I ever thought it would be I barely flipped through the pages before buying it and rushing home. Now that I have had time to live with it and love it I am more impressed than ever.
Moon walks you through 150 different cupcakes. Often, these are combinations of cake flavor, filling, frosting, and then decorations. She uses bases to spring into the stratosphere of creativity. Chocolate Chocolate Chunk? Mojito? Banana Split? Sign me up! I want to make every cupcake in here! Not only will the recipes get you drooling but all the cakes look brilliant and beautiful as well. She also includes a feature called Flip It which gives you ideas on how to alter the cupcakes for a different presentation, flavor tweak, etc. It is helpful and gets your creativity running. Moon also divides her book into helpful sections, which are:

* Spring Fever
* Summer Celebrations
* Fall Follies
* Winter Wonders
* Cupcakes for Sharing
* Resources
There are also an introduction and index. Cupcakes 101 is great because if you are someone who has never really baked, or are giving this as a gift to someone who does not have a ton of kitchen experience it is very helpful. If you are an accomplished baker or chef, skip that part or flip through it, then get on to the recipes.
The only thing I hate about this book is I cannot figure out which ones to do first! I love this book so much, and trying to decide is sweet, wonderful torture.

1,000 Ideas for Decorating Cupcakes, Cookies & Cakes (1000 Series) ReviewThis was an interesting journey that surprised me in that, thinking that there might be some tutorials to go along with the photo's, this is instead literally 1000 photographs of cakes and cookies and cupcakes.
Within the covers of this paperback book are full-page or half-page or quarter-page photographs of cookies, cakes, and cupcakes that will definitely inspire. Under each photo is the name of the person that created the baked delight. Though some of these credits will be just the names of the decorators, some will have the accompanying website that you can access for further idea's. If you do go to the websites offered, there you will find more photo's along with some beautiful tutorials and/or instruction as well as more information on the decorator. So with a little extra effort, your journey will take you to many parts of the world to learn more on the photo's that piqued your interest. Each photo is full color with wonderful detail.
The book is set as such:
First there are 5 sections of groupings that showcase each set of pictures and each photo has an accompanying number.
Elegant Entertaining
Baby and Child
Holiday
Just for Fun
Weddings and Engagements
After the above groupings, the next section is "Frosting Recipes" for:
Meringue Buttercream
Simple Buttercream
Gananche
Royal Icing
2 Recipes for Fondant (as well as amounts needed to cover cakes)
Gumpaste
Marzipan
The next section of the book is labeled "Image Directory" and this is where you look up the number of the photo which is accompanied by a very short description of the baked good, which might include what type of frosting used or cookie cutter, etc.
The last section of the book is the "Contributor Directory" which lists each of the bakers and decorators, in alphabetical order, with their websites and contact information.
I think that this is a lovely book, especially for beginners, to help your decorating interest but understand that it is not a teaching book. You will have to be more of a detective with this book in that you need to check out the websites offered, which may or may not include specifics, but which will put you in contact with the artists. Ms. Strauss is the owner of New York City's "Confetti Cakes". Though she worked in the fashion industry, a playful idea of mixing her love for baking with her eye for fashion brought her to this career, and it seems to suit her well. From her bakery comes this addicting book!!
Having been mesmorized by the feats and skills of such accompished cake decorators, I always look forward with great anticipation, to the latest tomes written on this subject. Ms. Strauss does not disappoint. She has compiled a rather delightful writing of the mastery of cake design and teaches a wide range of baking skills. The cake decorating devotee is given all the information necessary to reproduce what you seen on each wonderful page. This book has the ability for anyone, from novice to professional, to use and create and ooooh and aaaaah!
The instructions run from basic cookies in shapes from onesies outfits (that's the baby's first year everyday garment of basically longjohns) to purses, and cupcakes with beribboned polka-dots to beach sandals to the main event of spectacular cakes that would fool anyone due to their unique appearances, like popcorn bags to a sushi table, replete with "rice" and "California rolls".
The book is sturdy and thick with beautiful and detailed photography of each creation so that any questions can be answered with just a glance of the eye. Her explanations are clear and concise and they are given to you in steps both for the actions required as well as the timetable needed in order to plan your time wisely.

This photographic and written section has what you need to work with as far as equipment and decorating tools, and each piece is numbered with a matching explanation of how you use it. There is a glossary, baking terms, practical matters, how to transport your creations, techniques for the actual decorating, filling cakes, sculpting cakes, covering cakes with fondant, constructing the cakes to hold their weight, piping with frosting and royal icing, brush embroidery, "wood staining" for making candied "tables" and "crates", making sugar bows, and more.
