Bread Matters: The State of Modern Bread and a Definitive Guide to Baking Your Own ReviewThis author is quite simply passionate about bread! He is very openly on a mission to open the eyes of the public to the empty calories and harmful chemicals that have been masquerading as bread for decades now.
The first quarter of the book may turn some readers off since it is quite 'dry', but it is probably the most important part of the book!The author details the modern process of commercial breadmaking with all it's faults and dangers. Then he moves one to reiterate that making bread is not the mystery so many of us think it to be. The layout, while dull to look at, is chock full of excellent information on tools, methods, bread making steps and descriptions of ingredients. The explanations are clear and in a simple language that makes the book accessible to most readers.
The 50 bread making recipes in this book are scattered in chapters titled :
First bread and rolls
Simple Sourdough
Bread-a meal in itself
Of crust and crumb
Sweet breads and celebrations
Easy as pie
(and Miraculously!) Gluten Free baking!!
(on a personal note the last chapter will be a lifesaver for me since, two weeks after getting this book, I discoverd that my son is allergic to Gluten!)
I have tried out a few of the recipes in the 'first breads' chapter (Basic bread, Milk Bread) and one from the Sweet breads chapter. All turned out great although, having baked bread before, I was skeptical of the consistency of some of the doughs. What was great about the book is that the author forsees the questions that will pop up in the novice or experienced baker's mind (shouldn't I add some flour now? This is way too sticky!) and addresses them promptly in the recipe.
I especially enjoyed the section on the rubbishy instructions that some of the bread baking cookbooks include that make the whole process so complicated. On the other hand, the author is a strong believer in weighing your ingredients so, if you don't have a kitchen scale, you may want one after reading this book.
I can't help feeling that a slight change of format might have made this book appear a less intimidating to readers new to the idea of home made bread. The layout of the pages looks like a cookbook from the 50's or 60's and the color pictures are clustered in color plate sections instead of being scattered throughout the book and placed next to the relevant recipes. However, if you look beyond just the appearance of the text, this book is well worth it.
The best thing about this book is that it is an intelligent discussion of the 'how' of breadmaking. The author credits the reader with the intelligence to understand the steps without simply telling us what to and makes the entire process of breadmaking accessible and enjoyable to everyone.Bread Matters: The State of Modern Bread and a Definitive Guide to Baking Your Own Overview

Sugar-Free Gluten-Free Baking and Desserts: Recipes for Healthy and Delicious Cookies, Cakes, Muffins, Scones, Pies, Puddings, Breads and Pizzas ReviewI own several Gluten Free, Sugar Free cookbooks and many more medical science books to explain the "WHY"- and there are so many. This book is an excellent cookbook with detailed information for what to substitute where and when. So many Gluten-Free cookbooks never consider the SUGAR factor, which in my opinion, is very mis-leading and for so many Gluten-sensitive people an incredible waste of time, energy, and frustration.
Likewise I have several sugar-free recipe books, where the most common sugar substitutions are still, biochemically sugar. For instance, brown rice syrup-still sugar, your body doesn't know the difference on a chemical level. Glycemic Index wise it's only slightly lower than brown sugar, not enough that one should become too comfortable using as a constant substitution. I don't know what research Kelly relied on, maybe trial-and-error, whatever her method her product is sound and it shows in her consistency and the results the sugar-sensitive consumer experiences. ALSO, importantly, if you're cooking for a skeptical audience, or difficult-to-please children, the food is absolutely delightful.

I loved the chickpea bread as a sandwich bread - it had a "bland" taste and it didn't fall apart at all. I slice and wrap each piece in plastic wrap and then freeze them in a ziploc freezer bag. I also loved the Farmhouse bread. I made the batter and then baked it in English muffin pans to use as hamburger rolls - yum! I found two errors in the book. Two additional eggs are listed in the dry ingred. section for the Farmhouse Bread recipe - these should be omitted. Also, barley is listed in the GF flour ingredient list at the beginning of the book. Barley is NOT gluten free and should NEVER be eaten by a Celiac. After trying so many "egg-free" recipes off the internet that totally flopped and wasted my time and ingredients, I was so elated when I came across this book at a local bookstore. My husband, who is highly allergic to eggs, never could have any tasty baked goods. The best thing about Emro's recipes is that the baked goods actually taste good and 85% of the recipes are simple to make!
The baked goods I've made from this book are indistinguishable from your regular, quality baking with eggs! I prefer this egg-free recipe book over many of my bakery books that have eggs! I HIGHLY suggest buying this book! I've made wonderful cookies, cupcakes, cakes, shortcake, and more! I haven't even skimmed the surface of this book's potential and I would have paid $50 for the recipes thus far!
(Helpful hint: on occasion the batter may get a titch dry because of the lack of eggs, she generally replaces eggs with oil, etc, sometimes it is necessary to add a teaspoon or two of water, sometimes she will even say so). Use common sense with this cookbook. My husband has never been happier. He can finally partake of treats on the hoildays or just for fun!
Just tried the eggless cheesecake and it was wonderful. I was amazed I made it and it turned out so close to regular cheesecake, if not better. Absolutely wonderful recipes!

The Best Natural Foods on the Market Today: A Yuppie's Guide to Hippie Food, Vol. 1 ReviewI love and truly appreciate this very clever book because it has vital information that covers the most important basics to health: choosing foods, with lists of products that are easily available on the market, additives, genetically engineered foods, hormones and antibiotics, food allergies & allergies in general, a clear explaination of 'good' & 'bad' fats, easy yummy recipes & more. I particularly like the 'hippie wisdom' sidenotes ;)
It seems that the average person today has an incredibly busy lifestyle and most health food books are too rigid and have recipes with ingredients that most people would not know where to find or have the time to prepare such foods. This is a GREAT book for everyone because it lays it all out plainly & offers real solutions. Plus it has tons of coupons for many great foods avaible in your local grocery store.
It is very 'friendly' & fun, almost familiar in the way it's written- it made me feel excited about treating my body well, not overwhlemed and daunted.

The Ultimate Dog Treat Cookbook: Homemade Goodies for Man's Best Friend ReviewI love to browse through different cookbooks. I have quite a collection, and usually go to the library to find new recipes to try before I decide to purchase the entire book. I normally look for 3 things in a cookbook, besides delicious recipes that will work for my family (including my dogs). This includes:
1) Pictures of more than ¾ of the recipes (Color pictures are the best)
2) A spiral binding, or at least on that easily lays flat
3) New & innovative recipes that have ingredients I can easily find at a grocery store
For this book, I combined my love of my three dogs, with my interest in fun, interesting cookbooks. The recipes are great, and I love that the book includes a chapter for dogs with special needs (allergies to certain food products) as I have a dog that is allergic to both corn and wheat. The chapters include: Cookies by the Spoonful, Cookie-Cutter Treats, Special Goodies for Special Occasions, Good Dogs Deserve Good Treats, and Delicacies for Dogs with Special Needs. The only thing that I disliked about the book is that there are no actual photographs of the finished recipes, and was not in a binding that laid flat. Otherwise, this is a wonderful cookbook with recipes that should leave any dog and their human begging for more great recipes.
Some of dog's favorites include: Tummy Tempting Chicken Soup Cookies, Ginny's Bonanza Treats, Carrot Crunchies, Turkey Day Treats, Grain Free Goodies, and Beef and Barley Biscuits. Enjoy!The Ultimate Dog Treat Cookbook: Homemade Goodies for Man's Best Friend Overview

Raw Food Life Force Energy: Enter a Totally New Stratosphere of Weight Loss, Beauty, and Health ReviewEveryone is using the mystery of quantum physics as a mystical metaphor to empower life in general these days and Natalia Rose, author of "The Raw Food Detox Diet" is no exception in her new and equally well-put-together book, "Raw Food Life Force Energy: Enter a Totally New Stratosphere of Weight Loss, Beauty and Health."
In 260 plus pages, Rose re-educates her raw food fans on the further sensibilities of combining foods for easy elimination---reiterating her primary focus in "Detox" that consuming quick exit foods naturally slims the body while "waste" that remains inside the body too long eventually equals weight gain. Rose builds on her idea, explaining with a quasi-quantum physics approach that as everything existing has a vibration, it would make sense to ingest foods that will aid us in vibrating at the high rate in which we are designed to optimally function. High harmonious vibration foods consist of those grown closest to the sun, while inharmonious vibration foods include the usual suspects of cigarettes, liquor, processed, synthetic ingredients, mainstream animal fleshes, pharmaceuticals, radiation, x-rays and less obvious, pasteurized cow milk, yogurt and cheese.
In the first portion of "Raw Food Life Force Energy", Rose defines four principles: vibration, free-flow, quick exit, and natural bliss---all of which reinforce her main premise that eating well combined light to heavy (eating the lightest possible meals in the am while gradually increasing the density of foods so that dinner is the heaviest meal) meals will create a body and mind that remains well-tuned to the best the universe has to offer. The second part of the book presents Rose's 21 day action plan where after prepping your kitchen and shopping for staples through shopping revisions, a typical breakfast consists of a homemade elixir or fresh fruit, lunch a soup, salad or sandwich and dinner either a repeat of a luncheon selection or a cooked meal with raw vegetables. Desserts vary depending on the combination consumed at dinner, i.e. a flesh meal dessert would consist of cheese or dark chocolate. Rose includes a seventeen question test to help you determine your present energy vibe; she promises that whatever your current level, by practicing her techniques, you will feel more "attractive, youthful and emotionally balanced," as you plunge deeper into her program. The actual 21-day guide becomes a little redundant as the selections are basically yours to choose--day one through day 21 repeats with motivational words from Rose to keep you to your task. As in "Raw Food Detox," Part 3 includes Rose's unique and tasty recipes. She follows these with some FAQs to help propel you into a higher vibration; inviting the reader to cordially email her if any specific question is not addressed.
Bottom Line? If you enjoyed Rose's easy transition from heavy slow-moving food to light quick moving energy endowing fuel in her first book, you will definitely enjoy her new slant on a dieting fad that many people have easily embraced as a truly healthy way of life. The Atkins Shopping Guide: Indispensable Tips and Guidelines for Successfully Stocking Your Low-carb Kitchen ReviewFirst off, my credentials: I lost fifty pounds on this diet. This is a review of this guide, not of the diet.
The beginning part of the book gives a brief, peppy rundown on the diet itself. It has some good information, but the tone is irritating. The phrase 'doing Atkins' may be colloquially understood, but it sounds amateurish and is heavily overused. No opportunity to pimp Atkins brand products is passed up. The result had me on edge by the time I began reading the actual shopping guide, and then it got worse.
The useful parts are those dealing with raw foods, ones that don't involve 'branding' (that's corporate newspeak for "ramming the product name into your head and keeping it there," folks): fruits, basic meats, cheeses. Gouda is gouda; tofu is tofu; beets are beets. Unfortunately, even these parts suffer from some degree of measurement inconsistency.
If you're going to compare nutritional facts from item to item, you have to use the same size portions for each item in a class. It is no good referring to 1/2 cup of most vegetables, then switching to 'half a baked potato' or 'two tablespoons'. Sure, the reader can convert, but isn't that why I bought the book? Pick a half cup and stick with it. Or an ounce. A ton. I don't care, as long as it's consistent, and the book's measurements are often so inconsistent as to be impractical for reference.
Where the book really begins to go south is when it comes to any form of 'branded' food. Atkins Nutritionals, or whichever branch of the Atkins empire put this out, has naturally listed Atkins brand products first in every category. Okay, fine, we're big kids and can read past this obvious shill; but even so, a lot of the other name brand products evaluated are going to change as the market reacts. That's going to make a big chunk of this book obsolete. Plus, the obvious placement of Atkins brand stuff first leaves a lingering suspicion: how did they choose the brands for the book? I can't find a lot of them on my local shelves. Is it possible that the ones chosen were those that would look undesirable relative to Atkins brand products? I don't know; I'm not a professional nutritionist or supermarket chain buyer. All I know is that the array of choices sure makes the Atkins stuff look like the best in every category. Funny how that worked, eh?
The problem with low-carb dieting, at this writing, is that our food providers have decided to brand a lot of their products with the 'low-carb' label, as if merely saying so will make it so. The guide states, correctly, that this stems from a lack of regulation. A balanced, professionally written guide would have been a great step forward; the message urged upon the reader from nearly every page of this book--"Just buy ours!"--is a step backward.

Krystine's Healthy Gourmet Bakery Cookbook ReviewMost "low-fat" or "Healthy" recipes seem to be gummy, tasteless, or taste like animal feed. These muffins, scones, and other goodies are actually worth the trouble of baking and eating. BabyCakes: Vegan, (Mostly) Gluten-Free, and (Mostly) Sugar-Free Recipes from New York's Most Talked-About Bakery ReviewI was *so* excited when I learned that a Babycakes cookbook was in the works. When it arrived, I sat down and excitedly read it cover to cover with a pen and paper in hand to make my baking grocery list. It was then that I came across upon several issues:
1) As mentioned by many others, the book is only about 2/3 gluten-free. I know that Babycakes bakery bakes spelt items, so this was not a surprise to me. However, the book sub-title calling it Gluten-Free is misleading.
2) A large amount of the recipes call for Bob's Red Mill Gluten-Free All Purpose Baking Flour. There are two problems with this. First and most important to me, this flour is N A S T Y. It has garbanzo and fava bean flour in it, and those have a very strong and bitter taste. Many bakers, including myself, hate this stuff. Second, I was dissapointed to see that the book even suggests using a mix at all. On the Martha Stewart show when Erin and Martha make the Allergen-Free Cinnamon Toasties, Martha asks as she is stirring the flours together, 'Do you use mixes at your bakery?' Erin answers no. If this is the case, then why on earth is the cookbook directing me to do so? If the recipes had the true list of flours and starches used at the bakery, I would have an easier time making substitutions, like swapping garfava flour for, say, a combo of sorghum or rice flour, or subbing potato starch for arrowroot or cornstarch.
3) Coconut oil and agave nectar. These fabulous, spendy, and sometimes elusive ingredients are frequently used in hefty quantities in the book, and unfortunately we are left a somewhat in the dark about the details. Yes, the resources give us brand recommendations (aside: Did you look into the coconut oil source? small jar and big $$), but does not specify if it matters if we use virgin coconut or regular coco oil or light or dark agave. Since I don't want to go broke buying coconut oil, I googled and found an extra-virgin organic coconut oil by Nutiva that comes in 54 oz. containers and is reasonably priced. The same goes for the agave nectar. Madhava has a raw organic agave nectar that you can find right here on Amazon in bulk for a decent price. Hopefully these will so the trick.
4) Frosting. I do not believe these are the frostings used at the bakery. For example, a red flag to me is that the cookbook recipe for vanilla frosting is called 'Vanilla Frosting/Vanilla Sauce" but the Babycakes bakery frosting is called "Creamy Vanilla Frosting". While on Martha Stewart (the episode where they made the Allergen-Free Cinnamon Toastie loaf), Erin casually mentions some of the ingredients of her famous frosting. Among the ingredients is coconut milk. Unfortunately, there is zero coco milk in the book recipe, but there is liquid and dry soy milk. Babycakes NYC is a soy-free bakery. This is so disappointing to me, as I was really looking forward to making the real deal.
While I enjoy the aesthetic and the creativity of the book, I think it fell short in a number of critical areas.BabyCakes: Vegan, (Mostly) Gluten-Free, and (Mostly) Sugar-Free Recipes from New York's Most Talked-About Bakery Overview

Short Tails And Treats From Three Dog Bakery ReviewThis book is a quick read that held my interest from beginning to end. It's funny and has it's own unique charm. More importantly, however, is the business angle that is interwoven throughout the "tale" (the author's pun, not mine!). This is the story of two guys and their three dogs who started a company on a shoestring and have grown it to a good-sized company. I bought a second copy to give to my brother, as inspiration, who is now starting his third entrepreneurial endeavor. I can't think of a reason why readers and their doggies would not immenseley enjoy this book. I rank this book 5 stars.Short Tails And Treats From Three Dog Bakery Overview
