The Taste of Home Baking Book ReviewI have a ton of cookbooks, literally, and I liked this book. Taste of Home's books are always fun and nice to have, because they are written by people just like you me, who like to cook and bake. There aren't generally a lot of fancy schmancy masterpieces in these books, just good edible food from tried and true recipes. It reflects what people are eating, and there are some nice recipes. I found a couple that I'll be making over the Xmas holidays. I tend to buy the books from Amazon because the price is always about a third lower than buying directly from Reiman. Reiman is sleazy with their fake promos and misleading offers, so don't think you'll get anything worthwhile from those. I've subscribed to the magazines for some time, so I am on to them. That said, the books are a nice additon to the home library of people who like spending time in the kitchen. If you're an experienced baker, you can use it as an idea book. If you're new to baking, you can learn a lot from the recipes. The directions are generally straight forward and easy to follow.The Taste of Home Baking Book Overview

Eric Kayser's Sweet and Savory Tarts ReviewThis is a superior tart book both for technique and a well-organized array of recipes with some excellent flavor combinations. For the knowledge of the chef, the quality of the recipes and the photography, design and layout of the book I would give it 5-stars.
HOWEVER, hopefully the US publisher will do a little heavy lifting on corrections for the next printing: my advice would be to make a trial run of each recipe before preparing one of these tarts for public presentation, use your best baking judgment on ingredient amounts, and use the weights listed for more accurate measure. Originally published in French, this English language edition does not credit any translator and I would venture a guess that the translator is not a baker, nor did they consult one. Suggested volume equivalents are often glaringly off (e.g. Pate Brisee), and technique for assembly is often better guided by the superior photographs than by the meager written instructions, which can lead to not-so-spectacular results. For example, the recipe for the apricot pistachio tart instructs the baker to use half of the filling mixture to to spread on top of the apricots...if you do this, you will not see any gorgeous golden glistening apricots in your finished product.
It's a little sad when publishing companies "buy-in" a superior foreign published book with excellent technical credentials, but don't bother to invest the time in verifying the technical translations. People will and ought to buy this book for more than the pretty pictures, but they had better know what they are doing in the kitchen until the publisher gets cracking on the corrections.
PUBLISHER: test bake these recipes and correct them.

Beyond the Bread Basket: Recipes for Appetizers, Main Courses, and Desserts ReviewI live in Japan and the first time I was introduced to Maison Kayser's bread was several years ago in Tokyo in a "Boulangerie" they have not so far away from my place. Every single guest I have around I take to this place and they say this is the best bread they have tried, and it seems amazing to them that the best bread is in Japan, country of rice!
I have to say their breads are the BEST BREADS I ever tasted worldwide. My favorite is the olive bread followed by the cheese bread, among others. However, I was expecting this book to reveal more recipes of their bread and not just one main formula and ways to adjust it in order to get the recipes from the book, which is not the same then getting the formula/recipe for the bread it self.
I was expecting a breads book as well, therefore, I am slightly disappointed. I hope that Mr. Kaiser, do not delay on sending out the recipes for the delicious bread he sales in his Boulangeries "Maison Kaiser".
Even though, the book deserves to be purchased and used as well, because everything that comes out is good. I recommend buying it together with the "Eric Kayser's Sweet and Savory Tarts" which I rate 5 stars. SO GOOD!

Tartine Bread ReviewSome background: I am an advanced home baker with a couple years of professional baking under my belt, many years ago, so that is the perspective from which I write this review.
What this book is: a compilation of recipes from Tartine Bakery. There are only a few bread recipes, and then a collection of dishes made with those breads.
What it is not: a comprehensive bread baking book, or a book for beginners.
There really are only a few bread recipes in this book. The author goes into lengthy detail about his breads, his philosophy, and how to make them. For those of you who are familiar with Julia Child's Mastering the Art of French Cooking's treatise on how to make an omelet (it's about 20 pages long), that is what you will find here, just a lot fewer recipes. Why? Because Tartine specializes in making a few breads and pastries, and this book is about their bakery.
If you are looking for a comprehensive baking book of artisan breads, try Jeffrey Hamelman's "Bread." If you want easy, tasty recipes for most home bakers, take a look at the King Arthur Flour baking books, or Beth Hensperger's excellent "Bread Bible."
So, if you are not into creating and nursing sourdough starters, or you have no interest in reading through 20 pages of instructions to teach you how to make an artisan loaf of Tartine bread, this is not the book for you. There are plenty of other wonderful books on the market for that.
I would recommend this book for intermediate or advanced home bakers, or for professionals who are really looking to expand their bread baking repertoire.
The book does have some of the most detailed photos on folding and shaping loaves that I've seen, but the "artsy" quality of those photos is really irritating - I don't want to see special shadowing, I just want a clear picture of a technique.Tartine Bread Overview

Breakfast, Lunch, Tea: The Many Little Meals of Rose Bakery ReviewWhat a charming and wonderful book this is! From the lemon, rice and polenta cake to the Pistachio cake using a bit of wheat flour and ground almonds and pistachios, to the Eccles Cakes (cookies that use pie dough as cases) filled with raisins, spices, lemon zest and brown sugar to the lamb shank with cumin, eggplant and chickpeas, it's all wonderful. I've tried several other recipes, and, although I've only had this book for a few months, it's covered with smudges and bent pages.

Tartine ReviewUpdates August '08: Just wanted to reiterate how successful these recipes are. Since my first review, I've baked several more cakes, a couple of tarts, and the brioche (of 3 versions I've tried, by far my favorite, better than the version in Baking with Julia). This book has a large section of bavarian style cakes, and I credit the authors for this becoming my very favorite type of cake. I've tried the passion fruit-lime cake and also the strawberry bavarian, and they came out so delicious, light, ethereal even. The lemon curd recipe is also delicious. This is my go-to baking book now, especially for cakes. The recipes really highlight quality, fresh ingredients, and they're never overly sweet or fussy. In addition to the weddings cakes (mentioned below), I've brought Tartine cakes to friends, family, and the office, and--assuming they are being honest--everyone says they are among the best they've had. I believe them because I agree, and I give full credit to the authors for that.
One note, however, is that the basic cake recipes produce more batter than needed to fill the pan. For me, this usually means a 6-inch cake for the freezer, which is a treat.
Usually I try not to review any book until I've cooked at least 3 recipes from it (which is often 3 more recipes than some of the highly-ranked cookbook reviewers around here try). Technically, I've only prepared 2 from this book: croissants and tres leches cake. However, that cake involved the recipe for a coconut chiffon cake, caramel, and vanilla pastry cream, in addition to the syrup and cream for assembling the final cake. That, coupled with the intricate nature of the croissant recipe, gives me enough evidence to say that this is an excellent baking book, a great addition to any baker's collection.
I've tried croissants before, struggled with the technique, and failed to approximate the taste of a good, buttery, proper croissant. I followed the detailed instructions here exactly, and I got exactly what I want. My French husband approved, and my mom and sister and I ate them up far too quickly. The dough wasn't easy, but it made a true croissant. I especially like Tartine's extra touch of baking them a little darker than most other recipes.
As for the tres leches cake, I'll say nothing as to its authenticity, since I wouldn't really know. As far as the recipe, though, it's utterly manageable: instructions and measurements are accurate and clear. The results: absolutely delicious, maybe the best non-chocolate cake I've made. The coconut chiffon is moist and tender, and the coconut syrup, caramel, and vanilla pastry cream make it so moist, flavorful, and satisfying. Another touch I liked was the small touch of lemon juice in the caramel. I haven't made it before, but I don't recall this as a standard addition in recipes I've seen. But it was definitely worth eating with a spoon. Probably a dozen or more people sampled this cake over the weekend, and they all loved it.
I look forward to trying the devil's food cake and the brioche, and I'm confident that they'll turn out as well as what I've made so far.
Added later:
I also tried the devil's food cake recipe (Which includes recipes for the cake, caramel, ganache). It was a bit involved, but the directions were again very clear and spot on: I knew what to look for and even my first try came out great. I ended up making about 4 batches of the recipe and using it for my brother's grooms cake. Had raves from dozens of people.
Also, ended up using the tres leches chiffon cake for part of the brides cake, which also got tons of great feedback.
I look forward to working through this book even further.Tartine Overview

The Complete Magnolia Bakery Cookbook, Recipes from the World-Famous Bakery and Allysa Torey's Home Kitchen ReviewI saw this cookbook in a bookstore and promptly purchased it off amazon that evening. I have since made several items in the cookbook and have enjoyed most of them (although, surprisingly not the cupcakes. Mine turned out dry. I'll keep trying though). The brownies I've tried have been spectacular and they did not last long at all.
I really only have two complaints: First, none of the pictures line up. There are several pictures of treats, but you won't find them on the same page (or even near the same page) as the recipe. So if you see a picture you like, you have to scramble to find the recipe. Not a big deal, but slightly annoying. My second, and most significant, complaint is that the recipes repeat themselves! Page 91 and 97- same vanilla cupcake/vanilla birthday cake recipe. Page 92 and 98 same Devil's food cake recipe and another Devil's food on 104 that's only slightly different. 108/112 same chocolate cake recipe. And on and on. Sometimes the recipe is named with an icing (i.e., Devil's Food cake with Seven Minute Icing) and the icing is on a different page as well. I suppose I could see giving variations on the same page (i.e., "to make cupcakes do this:" "to make a 3 layer cake do this") but I don't understand why they decided to list the same recipes multiple times. I think that's in poor taste and it definitely discourages me from buying another Magnolia Bakery cookbook. Hummingbird Bakery Cookbook Review*EDITED*
There have been a number of mixed reviews about this book - in fact, there're quite a few negative ones that almost put me off trying to make anything from the recipes. I really wanted to know if this book was worth anything so I decided to prove it to myself. I am a decent baker; that is to say, I taught myself to cook and bake on a regular basis (often with good success!) but have no real culinary skills or knowledge. However, I do spend enough time in the kitchen to notice that the methods for doing various things in this book is quite different from most recipes that are commonly used. For example, the methods for mixing the cake mixture in Vanilla Cupcakes provide that you first combine flour, sugar, baking powder, salt and a bit of milk in one bowl; and some eggs, milk and vanilla extract in the other. Once thoroughly incorporated, the book tells you to mix the two together. Now, most recipes would ask you to first beat the egg and sugar in one bowl, add the milk and vanilla, follow by the dry ingredients. But I decided to stick closely to the recipes provided - using whatever amount of ingredients (which may seem "ridiculous" to many people) that the book suggests, and have my fingers crossed. The results? Well, the cupcake recipes (vanilla, chocolate and the velvet cupcakes) that I've attempted so far have turned out pretty good! They're all very tasty and do not appear to be "dry" or "inedible" in any way. My guess is that for those of you who are rather experienced would question the validity of the recipes and so instead of sticking to the book, would be tempted to do "what they think is best" - which is probably why there're more experienced bakers complaining about their various failures, etc. So my advice is for you to turn blind eyes and ears and just follow the recipes to the letter, even though your experience and "instinct" are telling you otherwise!
***The book itself is simply beautiful. It is well laid-out, divided into several sections like cakes, pies, tarts, cookies, etc. The recipes include: the basic vanilla/chocolate cupcakes, lemon cupcakes, red velvet cupcakes, strawberry cheesecake cupcakes, lavender cupcakes, hazelnut and chocolate cupcakes, coconut and pineapple cupcakes, banana and chocolate cupcakes, pumpkin cupcakes, marshmallow cupcakes, ginger cupcakes, hummingbird cake, carrot cake, brooklyn blackout cake, coffee cake, blueberry cake, spiced pound cake, banana bread, nutty apple loaf lemon loaf, New York cheesecake, icebox banana cheesecake, lemon meringue pie, pecan pie, pumpkin pie, mississippi mud pie, apple pie, brownies, muesli bars, rocky road bars, ham and mushroom muffins, spinach and cheese muffins, blueberry muffins, banana and cinnamon muffins, chocolate chip cookies, peanut butter cookies, white chocolate and pecan cookies, oatmeal raisin cookies, and gingerbread men. The photographs are all stunning, you get to see exactly what your cakes should look like.***
However, I must say that since I own over 200 books on cakes, cookies, ice cream and desserts, this book doesn't give you a very wide range of recipes - hence why I've given it 4 stars. The book is quite thin and it does have "enough" to keep you entertained for a while, but I prefer to have more choices so I usually have several books on very specific subjects. For example, if you're looking for a good book on cookies, I'd recommend "Martha Steward's Cookies", "The Good Cookie" and "Great Cookies"; for cakes, I'd recommend "Mary Berry's Ultimate Cake Book" and "Southern Cakes"; for cupcakes, I'd recommend "Cupcake Heaven", "The Crabapple Bakery Cupcake" and "Cupcakes: Luscious Bakeshop Favorites"; for general baking/desserts "Desserts by the Yard", "Maida Heatter's Book of Great Desserts", "Jim Fobel's Old-fashioned Baking Book"; for ice cream "Ices", "The Ultimate Book of Ice Cream", "The Perfect Scoops"; and for chocolate, I'd recommend "The Essence of Chocolate" and "Maida Heatter's Book of Great Chocolate Desserts".
Overall, if you're truly passionate about cakes and are NOT looking for "healthy" cakes (whatever that means!), you'll love this book. It'll be a great addition to your cook book collection, although I wouldn't say that this will be the ONLY book you'll need, because the book just simply doesn't offer enough varieties in the long-run. I've also been to the bakeries in London and I am happy to announce that my most recent batch did taste rather closely similar to the "real" things! I can assure you that this book will give you some great ideas and the pictures will be able to keep you coming back to the book time and time again!

P.S. I've also noticed that a few people have been comparing this book with Magnolia Bakery Book. I own all of them (2 by Magnolia, 2 by Buttercup Bakeshop and The Hummingbird Bakery) - and I'd NEVER pick the Buttercup Bakeshop over the other two. In fact, The Hummingbird bakery book actually contains MORE cupcakes recipes than those Magnolia books! It should also be noted that none of these books offer "healthy" goodies!
